Some years Texas and Oklahoma have good football teams and some years they don’t. Not every year are they the best team in the conference. You should get credit for beating a good team “signature win” if you beat a good team whether that team is Texas, Oklahoma, Houston, UCF, ASU or who ever else is good on a given year. The bias comes when you assume that it isn’t signature unless it is a brand name team that you beat. There are other great teams.
