+1 on Hotel Colorado. The Springs Lodge is also really nice, but a little pricey.
Honestly you give a great list. The food options in the newly (ish?) renovated heart of downtown are great. I’m thinking of the area underneath/next to the bridge over the River. Great area to eat and shop.
