GS is one of my favorite places. I've been there a ton (but still not enough). Here's my list:
1) Did you know you can take Amtrak from SLC to GS? It's a stop on the line between SLC and Denver. I don't know if you live in the Wasatch Front or not but if you do, you should consider this. There are definitely some things to know if you want to try this, so BM me if you want more details. The train station is right in the heart of town across the river from the hot springs, and the town is very walkable, so you don't even need a car to do most things if you take the train there.

2) There is a trail along the Colorado River that goes east of GS into Glenwood Canyon. If you like to run/walk/bike, that's a great thing to do – although I'm not sure if the trail has reopened after the huge fires they had about 3 years ago. Last time I was there you could only get about 2 miles east of GS before the trail was closed.

3) You of course have to go to the Glenwood Hot Springs pool at least one day/night. I love that place. They even have 4 lap lanes (that are about 31 yd long) if you like to swim laps.

4) There are a lot of good restaurants in the few blocks right in the heart of town.

5) GS is where the Roaring Fork River (from Aspen) meets the Colorado River. There is a paved trail that I think goes all the way from GS along that trail up to Aspen 40 miles away. You can rent bikes from several places in town. Even if you don't want to bike, just walking along that trail is beautiful.

6) There is the caverns park up top on the mountain north of town. I've been once and that's probably enough for me, but it might be worth going if you like caverns and amusement rides.

7) You need to at least wander through the Hotel Colorado when you're there, and look at all the cool historical photos. That hotel is a historical gem. Teddy Roosevelt stayed there on hunting trips back in the day. If you go between Thanksgiving and New Years, the Hotel Colorado is magical. It's layer upon layer of Christmas and feels like you've been transported back to a much more simple time. I try to get there during this time of year as much as possible.
