Maybe consider a day trip up to Redstone to see the Redstone Castle
You have to book a tour date and time in advance, and they're fairly pricey if you aren't doing it with a group. Then have brunch or lunch or dinner at the Redstone Inn.

+1 on Hotel Colorado. The Springs Lodge is also really nice, but a little pricey.

Yep. Italian Underground is probably our go-to spot. Good food, but it's more the atmosphere. Lots of other good options
