coming from. My uncle and aunt love their smoker and I have had their ribs. They are very much of the "purist" mentality as well. I'm hoping to have a smoker by next summer. I have one picked out that a local welder makes. It is something to behold.
I was only supporting my assertion that 350 isn't "too hot". I'm certainly not Martha in the kitchen, but the automatic picking at the temperature of the recipe without trying it is a little silly.
