If they're thin cut ribeyes, then 90 seconds was probably too long. I grill
thin cut ribeyes from the refrigerator for 3 mins. per side for medium.

If they were already cooked using sous vide, you just overcooked them when you went for the sear. IMO, no reason for sous vide for thinner cuts since they cook so quickly in a pan or on a grill.
