It seems like when I bump up to the M1 chip, I'm mostly seeing 8GB ram and
smaller hard drives unless I get back into $1,000 range. But that is good to know since I am completely unfamiliar with the M chips.

4-6yo Macs should do fine with Adobe apps, but I would suggest a Macbook Air M1
