If it doesn't need to be a laptop, a Mac Mini at Costco is only $769 right now.
It has the M4 chip and 16 GB of memory. It is still pretty portable, but you need to plug it into a monitor.
In terms of laptops, Costco also has a few MacBook Air machines that might work if you are willing to split the difference in price between the $500 and $1500. They are right around $1000.
