Exactly why I have no interest in smoking meat. Spend money on expensive meat
only to have it come out mediocre or worse and convince yourself it was good because you feel like you have to since you spent $75 on meat.

Tri tip is about as easy as it gets. Just takes a couple hours. Start there.

That's pretty standard - I cook hotter than that, 250-275. Rest for 6+ hours.
