I do similar with my old school Traeger. I set it at 180 until it reaches 165, then foil boat it.
The 180 setting usually averages about 200 per the meater probe. After putting it in the boat, bump it to 225. That usually produces about a 265 average.
My larger Traeger I use for brisket is a Costco $700 version of the old L’il Tex elite. The Costco version had a lower cabinet on it. Probably have had it close to 10 yrs. I’m sure the new ones are better at maintaining a consistent set temp.
I’ve had better results pulling when the meater internal reads 195. If I go over 200 (like the last time), it starts getting a little dry.
To rest it, I wrap with foil, then towels and put in a cooler for a few hours.
Here are a couple pics from the last one. As said, I pulled it a little late. It was definite on the dryer side.
