Don't go by temp at the end... go by how a probe goes into the meat.
In my opinion, you will probably end up at around 205 when the probe slides in 'like butter' (i suggest practicing sticking probes into butter a few times to get a handle on how it should feel 😃 )

Also, when you say let it rest for a while... how long are you talking? 3 hours is better than 1 hour.. 2 hours should be ok.
