Here's what I do
I use salt/pepper rub most of the time. Set Traeger smoker for 225. I place it fat side down on the grill. I remove it at 160 internal temp, then wrap and put it back on. Remove when it gets to about 200 internal temp. Let it rest for a while and then I slice it.
