Try some enchilada sauce or one of the simmer sauces for the chicken.
Toss the shredded chicken into a pan/griddle with enchilada sauce or a simmer sauce and heat until the chicken absorbs a lot of the sauce.

Frontera sauces are quite good, but pricy and lately sometimes scarce (Harmon's, Maceys, sometimes Smith's...no longer at Walmart). I prefer the enchilada sauces or barbacoa sauce to the chicken skillet sauce, but they're all good. Walmart has some decent enchilada sauces (Luchito) and Smith's carries Tapatio simmer sauces (very spicy but good) but I prefer Frontera. If the chicken needs a little extra kick, even with the sauce, toss in some taco seasoning or Goya sazon with cilantro and achiote. Not Mexican, but similar flavors.
