Camp. Did it on the grill, but flattop works too. Threw a layer of tortillas down, spread a handful of shredded cheese on each, then flipped them onto each other, cut into 6, served 3 wedges per person to start, handful of shredded chicken. Keep it simple. You can have sour cream, salsa (or mix them!) and they can serve themselves.
