I was under the impression we were ignoring H2H and on-field play and just going with what we think

After all, the committee made it clear than on-field results aren't near as important as injuries. And Georgia was dealing with injuries to their two top receiving options (Brock Bowers and Ladd McConkey).

Sure Georgia lost that one in a close game, but that's no reason to assume they aren't better. At least not by committee logic
