Hardwood. Love my teak Shumaru cutting board. Very solid and good on knives.
Get a 24” one for brisket. The two inch thick boards will not slide around, and last a lifetime with easy maintenance. I got the edge grain teak.

Boos is the big name in that space. I have one from Catskill that's great. Go end grain wood for sure if you can.
