It depends on how good he is; BYU has taken players who quit mid-season and lost players who quit midseason
Kingsley Suamataia left Oregon on October 27, 2021 - exactly halfway through the Ducks' season, when they were 5-1
Isaiah Bagnah left Boise St on October 29, 2022 - 8 games into the Boise St season, with Boise St 6-2
Dallin Holker left BYU on September 29, 2022 - 3 games into the BYU season, with BYU 3-0
Two of those players are currently in the NFL, Bagnah is still at BYU
All three of those players were listed on the two deep at the time they left. The reality is that if a player is good and helps a team, they're not going to turn him down just because he quit on his previous team.
