Japanese sake substitute for cooking?
For the cooking aficionados or Japanese food connoisseurs, what to do you commonly do for recipes that call for sake? Leave it out, replace it (with what?), just use the sake or it depends on the recipe? Looking at expanding out of my normal Japanese food recipes and many of the new ones call for sake. TIA.
