The flight hours at a 141 school (like a UVU or university) are an EXPENSIVE
way to become a pilot. I just looked it up, and you're typically going to graduate with 250-300 flight hours, which is basically enough to be a CFI. Cost is around $150K. At a private flight school, the cost is going to be half of that to get to that same point, and you'll do it in under a year instead of 4 years.
Sure, still go to some college (maybe online) and get a degree as a backup. But I wouldn't use a university as my pilot training plan.

There is no cheap way to get your licenses and ratings. Even the flight academies will run around 100k but you won’t

Well yeah. Free use of a 172 would dramatically cut the cost. I’m well versed on the different avenues to get there.
