There is an easy solution. Move the playoffs earlier. Start mid-December finish

1st or 2nd weekend of January. If the playoffs end early January and portal is open early January starting school issue solved. If CFP finishes 1st weekend of January, no classes have started or barely start. If CFP ends 2nd weekend, only 2 teams MIGHT have classes started. Many schools start after that.
