When you adjust the formation/aliignment for a play then the D may still react differently to it even if they don't know the true play intent since their D will adjust to the new alignment, so the receivers have to be prepared for the new adjustments and adjust their routes according to the D alignment to their new alignment--it can become alot of work.
So (from listening to postgame and interviews) the balance is to throw enough wrinkles in during critical moments to break the play/drive/game open without overwhelming the execution. Bronco got burned BADLY as D coordinator against TCU back in the day and admitted to implementing too many new wrinkles resulting in players missing assignments or flat out getting it wrong.
Even good coaches can have it blow up in their face, but with experience I think they become more aware of what they can successfully innovate game to game.
