My guess would be that elite offenses do a good job of disguising their formations so that it is difficult to identify what they are going to run.
Calling out that Hans was able to identify several plays based on Houston's formation suggests that poor offenses are more likely to give tells to what they are going to run.
I agree that it to KYU's point it happens more often than we admit, but pointing out that Hans was able to do it to Houston only reinforces the fact that if it's happening to a poor offense, we shouldn't be ok if it happens to BYU's offense.
