You get around the difficulty with the flat in part by aggressively trimming it
when you're prepping it. Get rid the end and edges that are unreasonably thin, then they can't dry out on you. It doesn't 100% solve the issue, but it helps.

I've done that. But even then, it's still hit or miss with the flat. This Wagyu
