About 30K each, then give them each a used car. As you say, if they don't use
all the money then they can apparently roll that into a Roth. (I think that is a pretty new thing?) For my 2 oldest - one who started college and another starting in a few weeks - they are going the route of inexpensive community college for their generals and then transfer, so the college money will go a lot further than 4 years at a university.

My wife and I have tried to instill in them the importance of saving so all of our kids have been partially funding their individual Roths since they were 14 through their summer and after-school jobs. (Unfortunately neither of my 2 oldest are interested in going on a mission so that isnt an expense they will need to contribute to like a lot of people on this board) If they do end up not using all the 529 money then rolling into a Roth would be awesome.
