I typically set my overnight cooks to the low setting on my rec tec
I go low (which is usually about 185 on my rec tec) right before I go to bed. When I wake up, I wrap them and set the temp to 225-250, and usually they are done by lunch or so. Then I cover them in towels, put them in a cooler, and let it rest until dinner. Typically they stay hot enough that its hard to handle the meat with bare hands even 5 hours later.
