I have a recteq smoker and I’m cooking a brisket.
I’m considering doing an over night cook. If I set it to 225 and put a pan a water in there to help keep it moist, can I just set it and forget until the morning? I’ve never done an overnight cook.

I do overnight cooks all the time but I set a temp alarm when the brisket

I would set my temp closer to 200 for an overnight cook just to be safe. 225

too late now, but I used to do overnight cooks, and switched to day cooks
