I wouldn’t do southern Spain in summer
Start in Barcelona…..drive through northern Spain to Santander….stay at a hotel on beach in Santander….next night stay in Santellana Del Mar……then on to Santiago de compestella…through Picos de Europa….then to Madrid…..day trip to Segovia and summer palace if you have a chance.
You can get hotels along the way where-ever looks good along the way.
