I feel like a lot of other cheeses like cheddar get lost. I like pepper jack on
a burger and otherwise, but it’s often easy to not even notice it. Jack and mild cheddar too mild IMO.
But I like other cheeses on there, too. Pimento Cheese is even great as a burger topping.

if you're trying to argue pepper jack should be the default cheese, that's not supportable. it's OK in a rare instance

I used to travel to NM about twice a year and tried as many burgers as I could. Lots of decent, but nothing incredible.
