The Korean philly is absolutely incredible. If this was a general hot sandwich list it would make it. That, and there's
a shaved ribeye sandwich here in Dallas at a place called Uncle Ubers. Those are two of the best hot sandwiches in the country.

if you're trying to argue pepper jack should be the default cheese, that's not supportable. it's OK in a rare instance

I used to travel to NM about twice a year and tried as many burgers as I could. Lots of decent, but nothing incredible.
