Its a three step process. Brine the Turkey. Start Smoking the Turkey. About an hour or so in. You put Bacon all over the
Breast of the Turkey.

The theory is that the bacon will self baste the breast, and slow its cooking down as dark meat should get to a higher temp vs the breast.

In the end you will have Turkey and Bacon. So its always awesome.
