I'm about 50/50 so there are folks here who are much better
But wrapping in butcher paper at the stall seems to have made the biggest difference.

But yes, spending $150 on a piece of meat and not having it turn out well is not fun.

My problem has been that the although the point usually comes out excellent, the flat is sometimes dry and needs sauce.
Not sure if anyone knows how to avoid that.
