I don't know about commercial planes but for private planes very little would be original.

The core structure is probably the only original part left. Everything else would have been replaced due to wear and tear. Even the control plane surfaces would eventually be replaced due to damage (i.e. hail)

Instrument panels always seem to be in a constant state of repair/upgrade.
