In regards to technology changes, definitely put CAT6 rather than CAT5 in.
That will NOT be cheaper to put in later, and it will not cost much to add (if they aren't already doing it). CAT5 will be outdated and likely a bottleneck in about 10 years, and I'm hoping your house will last longer than that. I'm baffled that they are still putting that in new construction homes nowadays.

Upgrades: Interior doors, Cabinets (Kitchen), paint (3 tone).. maybe higher end LVP (vs carpet or cheap LVP)
