I do overnight cooks all the time but I set a temp alarm when the brisket
Reaches 190. If it passes the wiggle test I close the pit and the vents and leave it till it’s time to eat.

I’m using a komado. No idea if you could do the same with recteq or whether it holds temps but an insulated egg does that really well.
