It’s good to keep an emergency brisket on hand
At about 6 pm tonight I learned we would be celebrating my son’s 21st birthday tomorrow and that he had requested brisket as part of the celebration. Our nearest Costco is 90 miles away and locally I pay $6-7/lb for an average quality brisket. Thankfully I had one brisket in the freezer. I was able to get it sufficiently thawed, trimmed and seasoned. It will go on in a few hours.
The great news is we’ll have brisket for dinner tomorrow. The bad news is I no longer have an emergency brisket.
