stressful to a lot of people between packing, getting to the airport, and going through security. Getting into your seat is the last step before you can (kind of) relax for a bit and watch a movie, read a book, sleep, etc.

I agree it’s non-sensical, but I think people feel like they can finally take a deep breath and relax once they are sitting in their seat.
