Correct. If you can't view what's going on, what's the point in cameras?
My bros in law both have a dedicated tv for cameras and 1 hooked up his regular tv as an input.

Eufy IMO. For the detached garage, I suggest a Reolink camera because it gives about a 180 degree view

5e is fine. It can handle 1000 mb a second. 4K video needs 15.
