In the Dordogne last spring I had an older couple invite me to their home and serve me foie gras, and I had lots of good conversations with people every time I was out and about.

I've found the French to be far more likely to chat than the Spaniards, who I've found a little cold, in general. Italians are also very friendly, so I don't disagree with you there.
