Ireland, Italy, UK, Scandinavia all great options for that IMO
Spain can be a bit harder without Spanish and food options can be trickier to find good stuff. But if you stay in the big cities it's fine probably.
Language in Italy can be an issue too in smaller towns. The police station in Lucca spoke no English when I was there in 2009.
