but its smaller than I thought so Im down to 205 to not have it done too soon. Skin is nicely crisped.

Depends upon several variable factors, usually about 12 minutes per pound. Don't smoke to time, though, smoke to temp

To crisp up the skin need high heat for over an hour.

Not me, that's way too high. Turkey doesn't have much fat to render, so it doesn't need to be low and slow,

If you’re on a smoker at 375 you will get more than enough smoke for a turkey…
