I think most Big 12 teams are pretty equal
Some teams may have slightly better coaching or recruiting and some have had some issues with injuries and sometimes winning or losing is contagious. But I think most of BYU's games have come down to a couple of plays and a little luck (or turnovers and special teams plays) and I'd guess that the same is true for other Big 12 teams as well.

Kansas State - BYU has one of the most incredible six minutes of football I've ever seen including a scoop & score and a muffed punt return for a TD.

Baylor - Bears start flat after losing on a hail mary the week before and BYU hangs on.

Arizona—The game is broadcast on Fox, allowing BYU to get a key fourth-down stop late in the second quarter. BYU starts the third quarter with a great interception and a strip sack.

Ok State - Very even came that goes back and forth and comes down to a TD with 11 seconds left. Multiple 4th down plays could have been huge for either team and an injury to Ok State's starting QB makes a big difference.

UCF - BYU starts strong coming off a miracle win and UCF struggles coming off a disappointing loss. UCF QB gets flagged for taunting which gives BYU the opportunity to take a 24-10 halftime lead instead of 17-14. BYU scores on the first drive of the 3rd quarter and rolls to an easy victory.

Utah - Utah plays an injured 3rd string QB, an injured RB, and loses their top receiving threat. BYU needs a defensive holding call to keep a last minute drive alive to win off a 44 yard FG.

Kansas - A questionable offensive PI call, a horrible interception, and a quirky punt/fumble result in 21 pts for the Jayhawks and BYU fails to convert on a last minute drive in the redzone.

As far as other teams go, Oklahoma State lost a tough game to Utah and then traveled to play at Kansas State who was coming off an embarrassing loss to BYU. They lost again and quit vs WVU, tried to recover vs BYU and then quit on the season.

Kansas prior to last week was one of the most unlucky teams in the country with multiple last second losses.

Utah arguably has been in every game this year except for Colorado and while it's become a joke, I'd bet they would be at least 8-1 if Cam Rising hadn't gotten hurt.

The Big 12 is just a very competitive and balanced conference where anyone can win on any given day.
