The big draws are big for a reason. Here's some lesser known gems I enjoy more
1. Go to the Netherlands, but not Amsterdam. Hit up Keukenhoff in the spring to see the tulips, and Giethorn (the Dutch venice). Bike around Zaans Schaans. Visit the market in Delft. Go to the Hiding Place instead of the Anne Frank home for a more intimate

2. Go to Slovenia and explore the mountains — same mountain chain as Austria but cheaper. See the caves and Lake Bled. Go to Piran and eat awesome Italian food on the beach.

3. Go to England and explore the Cotswalds. Find cool little towns and just walk them and explore their castles and fields.

4. Go to Ireland to Galway and bar hop to hear the awesome Irish music.

5. Go to Helsinki and visit all of the churches in one day! Catholic, Lutheran, non-denominational, the church built into the mountain, etc. Such a variety of different ways of expressing religiosity. Also the best chocolate in Europe.

6. Visiting castles in the Rhine River valley is cool, and there's great variety in a small space. Rent a car and drive around.

7. Hike the Mont Blanc trail, the "championship" of trail running.

8. Walk the Camino de Santiago in Spain and reflect on your relationship with the Savior as you walk the path of his Apostle (supposedly).

Anyway, some of the less trafficked, less touristy places are the real gems of Europe, IMO.
