Many people value cost over comfort, so airlines have an incentive to reduce
space in order to offer lower prices. I am around 97th percentile in height, so cheap seats are not comfortable for me, but sometimes I choose them because of price, and I don't complain because it's my choice. I do try to plan ahead to have an aisle seat so that I have room to stretch a bit. You could spread seats out more, but at the cost of higher prices.

An average price to rent a 737 is $21k per hour. Typical seating is 162, so the per-passenger cost is $130. Max seating is 189, so per-passenger cost would be $111. You can spread seats out, but you have to accept that prices will be higher. That's why it's great that we have many airlines with different seating/pricing strategies to choose from. If you want more space, that's great. Just pay for it.

Anyone can find the width and spacing of seats. When you pay for that seat, you should have an expectation that you will not have someone else taking up the space you paid for.
