It's a good experiment, whether you are pre-diabetic or completely healthy
A bunch of my family members have done it for similar reasons to yours it seems.

One thing they noted, you get less of a bump in glucose if you start any meal with a salad or protein, and eat your carbs last.

Another one, which wasn't too surprising was, if you wanted to kill your spike, exercise immediately after eating.
