They own sooooo much property in SLC and county and they're basically the
biggest decision maker. The U of Utah is the university in their home city with their headquarters and temple. With all the business they do it seems pretty normal they'd have an interest in supporting the university.
Some people act like UU is a liberal beacon free from church influence and ties. Is it though? We know that's not the case.
