Finishing early is totally fine. Finishing late a disaster.
Do not, I repeat DO NOT try to time it to be done at the time of the meal.

Give yourself a big ole buffer. It is not even kind of a problem if your brisket is done 6 hours early. Seriously. Not a problem. It will not be any worse than if it was done 30 minutes before.

That's all the advice I've got.
