I just finished my first brisket, question about resting
My first ever brisket just came off the smoker. A lot of what I read and watched online said to let it rest on the counter for a while and then put it in a cooler and let it rest for dinner. I left it on the counter for 45 minutes and it's been 45 minutes since it went in the cooler. I left my thermometers in it, and it appears to be dropping below 140 degrees right now. I thought I needed to keep it at/above 140 degrees. Should I heat the oven to 175 (lowest it goes), turn it off, and put the brisket in there to keep it warm?
