Right at the end of the episode, Carmy sends a plate out to a guest. The guest is Sydney. We see her admire the presentation of the food and take a bite. Remember, she joined The Bear because of him. Her experience with that dish was a pivotal moment in her life. I think the point of the episode is to show that years of grinding away at work that often feels menial can result in having a profound impact on others. It's sort of like the wax on, wax off bit in Karate Kid.
