Basically the entire MWC are beatable teams as are all FCS teams, but you don't get any credit for those wins so they differ from Colorado. I recognize it's been decades since they mattered in the CFB landscape, but their pedigree as a BCS/P5 team with a NC to their name means victories over them are worth more. If nothing else, you've beat a well funded (albeit mismanaged) program. Having one of those in close proximity to BYU is no small thing considering all the travel BYU's teams are going to face in the coming years. Getting 2-3 by adding the AZ schools would also be a plus for basically the same reasons.
