I don't think it's necessary to try to replicate what you lose each year.
When you lose a certain skill set you don't have to try to find that same thing in someone else. Uppity can find variety other ways.

How can you replace that player, but not how can you replace and replicate exactly what he offered.

Hifo was a good player. Had ups, had downs (like his constant running backwards when he was right at the first down marker because he thought he was fast enough to beat guys. Or slowing down way too often to do the pointless stutter step). But he's not irreplaceable.

Simon's consistency and YAC would be the hardest. But I don't like to think of it as how to replace guys.

What I care about more is the progress all 3 of them made and the confidence that Fesi will get the same from others. They'll have guys to catch the ball. I don't think the jet setup will be a big part of things. But Jackson could do that.

Biggest question for me mostly out of curiosity is how long it takes Epps to settle in. He's got a chance to really be special and he could begin to break out even as a freshman. Hill will be really interesting to watch as well. Other than that, I like the potential of Gunner now that there's nobody in front of him.

In general, the question focuses on the past. I'd rather ask who steps up than which player who isn't there anymore will be the hardest to replace. It makes more sense to me to think more about the current guys than asking a question that doesn't really matter to the future.
